The most sought-after tables are booked solid weeks, sometimes months ahead — and yet seats come back every single day. At Les Grands Buffets the restaurant cancels bookings that have not been prepaid and puts them straight back online; at Disneyland Paris booking is free and can be dropped at will; on starred tables, calendars open on a fixed date and people change their minds. Nowhere is there a waiting list, and nowhere an official alert.
