Is there a waiting list at Les Grands Buffets?
No. The restaurant states explicitly that there is no waiting list. Any table that frees up is put straight back up for booking on its website, and goes to the first customer who sees it. So there is nobody to contact to be called back, and no form to join a queue.
This is the first thing to know when you are after a table at a restaurant shown as full for months ahead: there is no queue to join, no place in line to wait for, no callback to hope for. The released table is not offered to you: it goes back on sale for everybody at the same time.
Cancellations are not rare, whatever the “fully booked” display suggests. They even follow a fairly readable calendar, imposed by the booking terms: a big wave 29 days before the meal, a second 11 days before, and isolated drop-outs every day up to the eve. The detail of that calendar is here.
Can you ask the restaurant to let you know?
No. Les Grands Buffets offers no alert mechanism at all: no notification, no email, no sign-up to a queue. Putting a released table back online is automatic and silent.
This absence of any mechanism is not an oversight: it follows from how the booking system works. A cancelled table simply returns to available stock, exactly like a table never booked. Nobody is told, because there is nobody to tell.

What it means in practice
With no waiting list and no official alert, only two methods remain: check the booking site very often and at varied hours, or have availability watched automatically.
